In preparation for the Snowpocalypse that is about to descend upon Baltimore, I thought I would post a recipe that's perfect for being trapped inside your house while the winter weather swirls around you.
Spicy Beef and Pinto Bean Chili, courtesy of Cooking Light Magazine. When reading the recipe in the magazine, you will discover that the editors left out a key step: adding the beef back in. But, luckily, they fixed the error online.
The next time I make this recipe, I think I may cook it beef daube style. That is to say, instead of cooking it on the stove top, braise it in the oven with the lid on. I think this will allow the beef to become much more tender.
Also, although the recipe doesn't call for it, I would suggest adding in a bag of frozen corn to balance out the spiciness of the other ingredients. And don't leave out the avocado or radish. I know it sounds strange, but it tastes amazing!
