I always forget how much I love this pantry staple and I'm always surprised by how delicious it is when I make it! It's super affordable (about 25-50 cents a serving), flavorful, and made with your normal pantry staples. Even if the "cupboards are bare", you can probably scrounge up the ingredients.
Ingredients:
1 box of pasta, such as cappellini, spaghetti, or linguine
5 cloves of garlic, sliced
fat pinch of red pepper flakes or more to taste
3 tbsp olive oil
2 tbsp chopped fresh parsley
1/2 cup Parmesan cheese or more if desired
Bring pasta water to a boil in a large pot and salt liberally. Add cappellini and cook according to directions on package, about 3 minutes.
Meanwhile, heat oil and garlic slices in a large pan and cook for about a minute, then add red pepper flakes and cook for about 30 seconds more.
Add two ladles full of pasta water, and boil for one minute.
Toss pasta with the sauce. Then turn off heat, toss in parsley, 1 tbsp olive oil, and cheese.
Serve immediately.
This is also a great recipe for add-ins if your cupboard/fridge/freezer isn't quite bare. Throw in some shrimp or grilled chicken or broccoli... yum!
